Dinner: Ong Choy, Pea Sprouts, and Hijiki

I was having some stomach trouble (to put it lightly) with the sushi I had for lunch today, so it was a relief to eat something simple for dinner. I made ong choy/kai xing chai which is like Chinese spinach, but with a hollow stem. I also made some pea sprouts (I love sprouts!) stir-fried with garlic. We had some left over hijiki from the night before, so I made it into a hijiki salad with some soy sauce and lemon. The lemon cut down on the sea-water taste of the hijiki.

The BF made Thai rice salad tonight, which was filling and refreshing. It would make a great summertime meal because it’s easy to make and doesn’t need a whole lot of cooking other than cooking the rice. It would also be perfect to bring to a potluck. I think next time, we should make it with some mung bean thrown in with the brown rice before it cooks.
