Pineapple Upside-down Cake

I made this vegan version of the classic *cough* trashy cake this weekend. It went pretty well, but because I used a different type of flour maybe it was a little too moist. I pre-caramelized the top using a different recipe, which was a good idea.  Doing this in a cast iron pan is also the way to go.
